Hey Reader! The morning after a holiday is always a special time. Either you're exhausted and worn out and a little grumpy from all that Black Friday shopping, or you're feeling happy and warm and loved with your family still sleeping while you sip on your morning cup of joe. I'm usually somewhere in between. Either way, I'm almost always inspired to make pancakes. I don't really like pancakes, but I know my husband does. And if his brother is in proximity, I know I need to double up the recipe. But these Vegan Lemon Ricotta Pancakes? I gotta say, I'll probably end up tripling the recipe, because I LOVED THEM.
